Café Chameleon Chef Bryan Gregg will be welcoming Chef Peter Loria of award-winning Café Matisse located in Rutherford, NJ to craft what will surely be a memorable four-course wine-paired dinner. 

When: Tuesday March 30, 2021 at 6:30PM. 

First Course by Chef Loria

Crusty sourdough bread layered with white bean hummus, eggplant caponata, topped with sushi cubed tuna and jalapeño pepper julienne scallion and baby greens with lemon sabayon and wasabi jus

Second Course by Chef Loria

Seared scallop and pan roasted foie with savory banana bread, pineapple chili chutney, macadamia nut creme and pineapple jus

Eyrie Willamette Valley Pinot Noir 2017

Third Course by Chef Gregg

Wood roasted saddle of lamb, egg yolk, early peas, black truffle puree

Chateau Beaucastel 2014 (poured from magnums)

Fourth Course by Chef Gregg

Chocolate budino, toasted almond crunch, coffee cake
